Profile -
What is the "profile" of coffee and how does the processing of the coffee cherry influence it?
In most of my cupping classes I try and spend a good amount of time sharing with my students the difference between processing coffee cherries after harvest. It is here that the profile of that coffee takes on its real character. Honey process vs. washed vs. natural vs. wet hulled. It is literally quite possible to process the very same coffee, from the very same plants, picked at the very same time and end up with two very different tasting coffees by how it is processed.

I have long had a fascination with the migration of coffee from ancient Yemen to the rest of the world. This simple beverage has impacted the socio economic structure of countless regions of our world. My research has taken me down so many rabbit holes. Mapping the impacts of coffee on people, industry and even art. For those of you that don't share my relationship with coffee you might just tell me "forget all that stuff and just sip your coffee." For me each sip is a journey, it is all part of a really complex and fascinating story. This month I want to share with you some insights into how the coffee house impacted our world. Coffeehouses changed the world by replacing alcohol with a sober stimulant, fostering democratic public conversation. Many of these coffeehouses served as the birthplace of modern finance, journalism, and revolutionary political thought during the 17th and 18th centuries. I hope you enjoy this months podcast.
